Ever wondered why you can knock back three cups of coffee in one go while your other half can never drink more than one? A study carried out by Harvard School of Public Health, in conjunction with Brigham and Women’s Hospital researchers, could hold the answers. The study involved analysing the coffee drinking habits of 120,000 participants and was able to isolate six genetic variants.

The six included two genes involved in the way we metabolise coffee, POR and ABCG2. Two others, BDNF and SLC6A4, could have an effect on how rewarding we find caffeine. The final two, GCKR and MLXIPL, were known to have an impact on how we metabolise glucose and lipids, but hadn’t previously been associated with the metabolism of caffeine.

The findings of the study suggest that we automatically moderate our caffeine intake to experience the fullest effect. Marilyn Cornelius, the lead author of the study and a research associate at Harvard School of Public Health, said that the research may allow for the identification of groups likely to receive health benefits from increasing or reducing their caffeine consumption.  Marilyn Cornelius’ colleague Daniel Chasman, senior author on the study and associate professor at Brigham and Women’s Hospital said the research was interesting as an example of how genetics can influence behaviour such as caffeine consumption, and similar patterns could be seen with alcohol and smoking.

So the next time that you think you can’t get through the morning without a large cup of coffee, remember it could be your genes to blame!

How a UK start up is transforming coffee waste

Here at the Wholesale Coffee Company, we’re very conscious of our environmental footprint and are always looking at ways to minimise it. That’s why we were interested to hear about bio-bean, a UK start up company who’s turning used coffee grounds into fuel.

In the UK alone, we produce around 500,000 tonnes of used coffee grounds every year. Only a very tiny proportion is currently recycled, mostly as garden fertiliser. When coffee grounds are sent to landfill, in common with other organic waste they emit methane, a greenhouse gas.

Four years ago, Arthur Kay set up bio-bean with the aim of minimising the UK’s coffee waste. They’ve now got a recycling centre in Cambridgeshire, where grounds from across the UK are transported into new energy sources as biofuel. The new ‘coffee logs’, each one made from the grounds of 25 cups of coffee, burn around 20% longer than wood as they have a higher calorific value. Bio-bean have launched ranges both for industry and for the domestic market.

Coffee shops big and small have been joining in and sending their grounds in for re-use, and bio-bean promise that they’re transporting it as economically as they can using waste management companies. They’ve also partnered with companies such as Network Rail, so the remains of your early morning latte are now likely to go into the programme. Plans for the future include developing a liquid bio-fuel that could even be used to power London’s iconic red buses.

Hallowe’en coffee specials for 31st October

If you like to offer seasonal specials in your coffee business, we’ve come up with some Hallowe’en ideas that are sure to grab those menu headlines.
Dripping blood cappuccino
This idea isn’t confined to cappuccinos, but you do need a coffee with a frothy top! You’ll also need to serve in a glass rather than a cup for the full effect.
Before you pour the coffee, drip the rim of each glass in a saucer of strawberry or raspberry syrup, just enough to colour it. Then, make the coffee as usual and drizzle more syrup across the top so it runs down the sides just a little. Garnish the saucer with glace cherries.
Marshmallow ‘ghosts’
Any regular coffee can be ‘spooked up’ with the addition of a little marshmallow ghost. All you need is marshmallows in two different sizes. Thread the larger one onto a cocktail stick, and follow with the smaller one. Using food colouring pens, draw eyes and a mouth onto the smaller marshmallow. Use to garnish the coffee itself (note – it will melt into the coffee!), or serve on the side
Screaming cream
If you offer whipped cream with drinks such as hot chocolate and cafe creme, add a ghostly touch. Either whip cream freshly from scratch and add a few drops of red or green food colouring, or spray it into a bowl and mix the colouring in. Top the drink with ‘normal’ cream and add a couple of blobs of the coloured cream for effect – you could also use it to make little faces.

If you’re still on a post-Christmas health kick, may we recommend this superfood coffee smoothie? It’s designed to be drunk cold, so you can make it a few hours before drinking. It makes a perfect breakfast drink, the ideal accompaniment to a stressful commute.

Almond milk is rich in vitamin E, an important vitamin essential to the correct function of many organs in the body. It’s also an antioxidant, meaning it helps to reduce cell damage. It can also boost energy and improve physical endurance – both useful benefits if you’re travelling to work!
Another ingredient in this super-smoothie is chia seeds. If you haven’t yet come across these tiny black seeds hailed as one of the most nutritious foods on the planet, you may be surprised at the idea of adding them to coffee! Chia seeds come Salvia Hispanica, which comes from the same family as mint. They’ve been known as a food source for thousands of years, and were much prized by the Aztecs and Mayans for their energising properties. The name ‘chia’ comes from the ancient Mayan word for ‘strength’.

Chia seeds are packed with omega 3, which has multiple health benefits including the reduction of stiffness and joint pain, and they’re also a powerful antioxidant. If you don’t like the idea of seeds in your coffee, don’t worry – the seeds will swell up when soaked, and once blended, you’ll end up with a textured smoothie with a slightly nutty taste.#

To serve one, you’ll need:

  • 175 ml almond milk (you could also use soy if you prefer)
  • 30ml cold, fresh espresso coffee (use decaffeinated if you’re really on a health kick!)
  • 1 banana
  • 2 tablespoons chia seeds

Put the chic seeds in the blender with 6 tablespoons of cold water. Leave to stand for five minutes, until the soaked seeds become gelatinous. Then, add the remaining ingredients and pulse in the blender until smooth. Add a little ice, and either drink immediately or transfer to an insulated mug for transporting.
